What’s in your fridge?!?

If you are participating in the BMCF Nutrition & Lifestyle Challenge this month, I hope that you took the time to clean out your fridge before starting.  If you didn’t, do it now!  And by clean out your fridge, I mean you took everything out, wiped down the nooks and crannies, then carefully inspected each item for freshness and “Whole 30/Paleo” worthiness, before neatly and somewhat ceremoniously placing it back in your sparkling clean fridge.  And even if you aren’t “officially” participating in the 30-day Challenge, I encourage you to clean your fridge and stock it with healthy, fresh, whole foods to nourish and strengthen your body and mind!

If it isn’t already obvious, I love food and especially cooking.  I have enjoyed the Challenge so far, not only to hit the reset button; but for the “excuse” to try new ingredients and new ways of cooking the same things.  The challenge for me this month has been finding the time to search out new recipes and then actually having the time to test them out.  This week I looked in my (clean) fridge for inspiration, and then I looked on the internet — my best friend when searching out a new recipe on the fly.  I do love cookbooks, the ones with pictures are the best; you can find me on the couch flipping through the pages, dreaming of this recipe or that, and then going to the kitchen to cook.  But there is not always time for such luxury.

In my fridge this week, I found the following: parsnips, beets, kale, shaved Brussel sprouts, collard greens (they were on sale!), butternut squash, and some Italian sausages.   And Atkinson’s is not far away, either.  I’m thankful for so many options!  Off to Google search I go…

I trust that your fridge (and freezer and pantry) are well-stocked with delicious ingredients, just waiting to be chopped, minced, pureed, fricasseed (I just like that word!) and devoured!  Have some fun in the kitchen; I know I will!

Here are some recipe links I am hoping to try (maybe you will, too):

Carrot & Parsnip Puree

Warm Brussel Sprouts Slaw with Asian Citrus Dressing

Paleo Zuppa Toscana Soup

Baked Beet Chips

Stove-top “Cheesy” Paleo Chicken Casserole
